Oven Roasted Root Vegetables - Lip Smackin' Good

 

·       4 Medium-sized Rainbow Carrots

·       6 Fingerling Potatoes (Sliced lengthwise)

·       1 Medium-sized Beet (Sliced into ½” pieces)

·       1 Radish (Thinly Sliced)

·       ¼ cup Green onion (Diced for garnish)

·       2 sprigs of Rosemary

·       Salt and Pepper to Taste

·       1 Radish (Thinly Sliced)

·       ¼ cup Green onion (Diced)

·       ½ jar Lip Smackin’ Good Belgian Wheat Ale Beer Jelly


Directions

On a greased pan, MIX WELL: rainbow carrots, fingerling potatoes, beet, ONE spring of rosemary, salt and pepperLip Smackin’ Good Belgian Wheat Ale Beer Jelly.

 Bake at 400 degrees for 35-40 minutes (when fingerlings are soft and crispy.

 Serve Warm. Garnish with radish, green onion and remainder rosemary spring.
