· 12 Wooden or Bamboo skewers (soaked overnight in water)
· 4 Boneless Chicken Thighs (sliced in strips)
· Salt and pepper to taste
· 4 tbs EVOO
· 4 tbs Soy Sauce
· ½ container of Queso Melt Cheese
· ¼ cup Shredded Cheese of your choice
· ½ jar Lip Smackin’ Good Black Bean and Corn Salsa
Queso Dip
Mixed Queso melt cheese, shredded cheese, and Lip Smackin’ Good Black Bean and Corn Salsa in an oven-safe dish.
Bake at 350 degrees for 20 min. Serve warm.
Chicken Skewers
Oil the grill racks. Preheat your grill using all burners set on med/high and with the lid closed for 10 to 12 minutes.
Thread the chicken strips onto the pre-soaked skewers, and grill on med/high heat on both sides until the chicken is done in the middle, 2 to 3 minutes per side.
