Low Carb Cajun Cauliflower Rice Jambalaya - Lip Smackin' Good


 

INGREDIENTS

1 bell pepper

1 onion

1lb Shrimp

1 pack of Cajun Andouille Sausage

Two 10oz packs frozen riced cauliflower 

2 tablespoons tomato paste

1 tablespoon Da Bayou Spice Blend 

1 cup chicken broth

 

My husband and I, in our best efforts, try to monitor our carb intake. This becomes especially difficult when it comes to dinner time. We both love carbs but we both feel so much better when we try to limit the amount we consume in a days time. I always try to come up with unique ways to incorporate low carb ingredients but still make them fun and delicious. I’ve never been your baked chicken with a side of broccoli type of gal. This recipe was a HUGE hit, with myself and my husband. It is full of flavor and has a little kick from the cajun seasoning. You’ll have plenty for leftovers, which was just as delicious the next day.

 

 

 

INSTRUCTIONS

Dice bell pepper and onion then sauté until soft, chop up precooked sausage and toss into the veggies for a few minutes until browned and warmed, add in the cauliflower rice (uncooked), add Da Bayou Seasoning, tomato paste and broth. Cook until the cauliflower starts to get tender, then add in the shrimp for the last 2-3 minutes.

NOTE: This recipe can get a bit spicy with the Cajun seasoning and the addition of the Cajun sausage. To cut down on the spice, I like to use regular sausage but still incorporate all of the wonderful flavors of the Cajun Seasoning.

Not to be out done by any fast food joint on the planet, I came up with this recipe because I just love Popeye’s version of red beans and rice. I take it a step or two further to give this dish a delicious smokey flavor. It’s time-consuming, but well worth the effort!
