Pumpkin Butter Muffins


There are a few things you can count on every fall: Football, cooler weather, and pumpkin flavored foods. I love pumpkin as much as the next person, but this time of the year, there are so many choices of pumpkin snacks at your local grocery store, it can be hard to sort out the good stuff from everything else. There’s pumpkin pie, pumpkin coffee creamer, pumpkin yogurt…the list goes on. But my favorite are pumpkin muffins. But let’s face it, a fresh, hot, home baked goodie trumps a store bought one every time.


So in the spirit of fall, I present to you this darn-good Pumpkin Muffin recipe. What makes it so good? It uses our all natural Lip Smackin’ Good Pumpkin Butter. So if you’re not feeling the autumn season yet, just wait until the smell of these bad boys start bakin’ in your kitchen.


INGREDIENTS

  • 2 cups flour

  • 1/2 cup brown sugar

  • 1 Tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon pumpkin pie spice

  • 1/2 cup canned or fresh pumpkin

  • 1/2 cup Lip Smackin’ Good Pumpkin Butter 

  • 1/4 cup + 1 Tablespoon milk

  • 1 large egg

  • 1 Tablespoon raw sugar (to top)


Directions

  1. Preheat oven to 425 degrees F and spray a muffin tin with cooking spray, (or muffin liners)

  2. In a large mixing bowl, stir up the flour, baking powder, sugar, baking soda, salt and pumpkin pie spice.

  3. In a separate bowl, combine the pumpkin butter, pumpkin, milk and egg.

  4. Add the pumpkin mixture to the flour mixture, and mix until well combined. The batter should be nice and thick.

  5. Divide mixture evenly between the 12 muffin cups.

  6. Sprinkle raw sugar on top.

  7. Bake for 15 minutes.
